Japanese Noodle Salad with Sesame-Ginger Dressing

1. boil vermicelli, rice noodles, soba noodles, udon, or any asian noodles. cool in the fridge. 
2. Slice carrot, cucumber, green onion. toss into salad. 
3. stir together 2 cloves minced garlic, 2 tablespoons sesame oil, 2 tablespoons rice vinegar, 2 tablespoons soy sauce, 1 tablespoon brown sugar OR peanut butter, 1 tablespoon chili paste, salt, pepper, a 1 inch piece grated ginger or a dollop of wasabi or both.
4. toss together, top with cilantro, toasted sesame seeds, and bean sprouts.
