Asparagus & Goat Cheese Quiche & More

QUICHE! Many variations. This is a great one.

1. Get pie crust. Make, or buy. Grease a pie plate, put in pie dough, poke holes and bake for 10 minutes. cool.
2. In a bowl, mix together [for each medium sized quiche] 3 eggs, 1/4 cup skim milk, 2 tablespoons sour cream, salt, pepper, and nutmeg.
3. boil asparagus for 5 minutes, drain.
4. in cooled pie crust, add in asparagus, then egg mixture, and top with goat cheese.
5. bake for 30-45 minutes. poke in a toothpick or fork, if it comes out clean, it's ready.
6. let cool before removing from pan, carefully, and serve!
