Asian Coleslaw

1. chop together red or normal cabbage or buy cabbage mix. add red onion or green, tomato, green onion or red onion, celery, and peanuts.
2. in a saucepan, bring 1/4 cup white vinegar to a boil, with 2 tablespoons brown sugar and 1 tablespoon mustard.
3. turn off heat, add 1/2 tablespoon grated ginger, 2 tablespoons sesame oil, 1 tablespoon lime juice, salt, pepper.
4. toss salad with fresh cilantro and dressing. add a bit of low-fat mayo for creamyness. top with peanuts and bean sprouts.
