Tacos Rosarito


Drop the beef burritos, or chicken fajitas. Use seafood! 
  • Frozen shrimp or calamari
  • taco or fajita seasoning, make or buy. [to make: 1/2 cup water with 1 teaspoon cumin, 2 cloves minced garlic, 1 teaspoon chili powder, salt, pepper, 1 tablespoon lime juice or zest]
  • in a saucepan, heat 1 tablespoon oil. toss in shrimp with red pepper, habanero or jalapeno [chopped] if you like a bit of spice, half a chopped red onion, half a chopped red pepper
  • add in taco or fajita seasoning, simmer until water has evaporated.
1. heat soft or hard taco shells. for soft, ALWAYS USE CORN TORTILLAS. the small ones.
2. get bowls of cilantro, tomato, refried beans, salsa, sharp cheddar or monterey jack cheese,  and sour cream
3. best with seafood mexican? mango salsa, cilantro, refried black beans, sour cream. 

grill shrimp, calamari, or fish seperately. add into mix. 
wrap up with avocado, sour cream, beans and whatnot, serve.
omit the carbs, serve as a plate! guacamole, cheese, beans, shrimp or calamari/


Gnocchi with Vodka Rose Sauce

Gnocchi isn;t exactly pasta, it's more like italian potato dumplings. You can also make linguine, fettucine, spaghetti, or even penne. Or any damn noodle to be honest, with Rose Sauce. This once is amped-up with VODKA. 
1. prepare noodles or gnocchi, drain. meanwhile....
2. In a saucepan, melt 1 tablespoon butter. also add onions or veggies or meat if you'd like. tomato chunks for texutre. 
3. add 2 cloves minced garlic, 1/2 cup milk or cream, 2 tablespoons tomato paste, a tablespoon lemon juice, salt, pepper to taste.
4. add 1/4 cup vodka. simmer until it's mostly evaporated.
5. add 1/4 cup parmesan cheese, and corn starch if you want it thicker.

SERVE! WITH EXTRA BASIL, PARLSEY, AND/OR CHEESE. 

Vicky's Lightened Up Alfredo!
You don't need heavy cream for this, you can just use skim milk to be honest.

1. boil pasta [fettucine, linguine, or spaghhetti], and drain. meanwhile....
2. in a saucepan or pot, melt 1 tablespoon butter. add 3 cloves minced garlic, mushrooms and onions are optional. salt, and pepper. 
3. add in 1/2 a cup milk, and 1/2 tablespoon corn starch to thicken. then add 1 tablespoon lemon juice, a pinch of nutmeg, and a handful of fresh parsley.
4. right before serving, add 1/2 cup of parmesan cheese, grated. 
5.toss with pasta, top with grilled chicken, herbs, more black pepper, and even more cheese.

Guacamole!


Vicky's Signature Guacamole!
i brought this to a party with like 20 people. it was gone in 20 minutes. sad. i made a huge batch too...so you know it's good. it got eaten faster than the goddamn bacon-cheese dip. people were slathering it onto their cheeseburgers for god's sake. ok, so make it!

  1. Mash together 4 ripe avocados. 
  2. add 1/4 cup lime juice or more [according to taste]
  3. add 1/4 cup sour cream for extra creamyness, and because avocados are expensive.
  4. 2 or 3 cloves minced garlic
  5. add 1 small finely chopped red onion, 1 or 2 jalapenos OR habaneros if yo love your spicy.
  6. add 1 or 2 chopped tomatoes, or 1/4 cup chunky salsa, up to you.
  7. a large handful or two or fresh cilantro, depends how much you like it.
  8. lots of salt, some pepper if you want. 
  9. taste and adjust everything. add hot sauce or another pepper for more spicy, and if it's too thick, add more sour cream OR lime juice. 
  10. serve with tortilla chips, on tacos or fajitas, or with veggies. 
ALSO CONSIDER:
Black bean guacamole; a can of cooked black beans or refried beans added.
Meaty Guacamole: taco meat, or fried chorizo, or faijita meat, whatever. if it's a dip, go all out.
Cheesy Guacamole! Add in crumbled feta cheese, or even some goat cheese. Or monterey jack, or cheddar, anything to make it QUESO.

ALSO.....
Hummus guacamole. subsitute half the avocado for hummus or mashed chickpeas.
Italian Guacamole: plus basil and tomato sauce.
Ceviche Guacamole: chopped seafood, like crab, shrimp, snapper, or squid
Fava Bean Guacamole: well avocados are healthy fat, but if you don't want it, mash upsome fava beans.
Bacon Guacamole: need I say more?
Taco Gucamole: add a packet of taco seasoning, fried chopped onions, peppers, etc instead of raw.







Stuffed Mushrooms


STUFFED MUSHROOMS!

simply get some mushrooms, remove the stems, stuff, and bake for 30 minutes.

  • RED PEPPER PESTO & GOAT CHEESE:: red pepper pesto, goat cheese, some fresh basil
  • CAPRESE: basil pesto, tomatoes, mozzarella
  • PIZZA: tomato sauce, pepperoni, mozzarella
  • MUSHROOM MELT: swiss cheese, peas, cream sauce to top
  • SPICY: jalapenos, ground beef, sharp cheddar
  • PARMESAN: tomatoes, parmesan, basil
  • BACON: chopped bacon, cheddar
  • MEDITTERANEAN: feta cheese, spinach, garlic
  • TERIYAKI: chicken, beef, or tofu, teriyaki sauce and green onions


Spaghetti & Meatballs


A seemingly basic dish, but I make a killer version.


MEATBALLS: 
500 grams ground meat [anything from beef, turkey, to lamb]
1/4 cup breadcrumbs
a pinch of salt and pepper
a handful chopped fresh parsley
2 cloves minced garlic
a dash of worecestershire sauce
mix, and form into balls. bake or fry until cooked through. [about 30 minutes baking time, flip halfway through]

SAUCE: 
  1. heat 1 tablespoon olive oil with 2 cloves minced garlic. add in chopped onion, green bell peppers, mushrooms, salt, and pepper.
  2. add a can of tomato sauce, plain, or simple, like roasted garlic or herb.
  3. add a dash of red wine, simmer until evaporated.
BOIL PASTA. ADD SAUCE, MEATBALLS, PARMESAN CHEESE, AND SERVE.


Sushi!


The easiest to make is Maki, or the rolls you'd usually refer to as sushi, although this is innacurate. The word sushi itself means "vinegar rice" or something along those lines. Sashimi refers to the fish on its own, Nigiri is a log of rice topped with fish, and Maki are the cute rolls that we all known and love.

THE BASICS: you need....
  • sushi rice [recipe to follow]
  • Nori [seaweed sheets]
  • fillings
  • a bamboo mat is very helpful, and plastic wrap.
  • a knife. 
HOW TO MAKE SUSHI:
  1. 1. get sushi rice from the groceries. you can't use normal rice, it HAS to be sushi rice. find it in the asian section, or rice section.
  2. boil sushi rice according to direction. taste to make sure it's done, but don't overcook it; it'll turn to mush.
  3. . for each cup of cooked rice, add in 1/4 cup white vinegar, 1 tablespoon sugar, 1 tablespoon sesame oil. mix and cool, until you can handle it.
  4. lay out bamboo wrap, top with plastic wrap, Nori, and rice. [as in picture, above] add fillings in a strip at one end, and roll, tightly. don't worry if some of the stuff spills out the edges, you're going to cut it anyways. just snack on the unsightly bits. make sure you don't accidentally roll in the plastic wrap... gross. 
  5. run  a sharp knife under hot water, then cut into slices. 
  6. serve! ginger and wasabi and soy sauce!
SUSHI FILLINGS:
Classic Salmon Roll. Sushi grade salmon by itself, or add avocado and cucumber for a bigger roll.
Tuna Roll: Sushi grade tuna, you can add green onion and some avocado.
Spicy Rolls: mix some mayonaisse with sriracha or asian garlic-chili paste [found at the groceries] and mix fish in. this is how you make spicy tuna, spicy salmon, etc.
California Roll: the classic. Imitation of real crab, cucumber, avocado.
Sushi Pizza: a rice cake, topped with fish and other sushi things.

OTHER ROLLS:
  • Dynamite Roll: spicy mayo, tempura shrimp, avocado, cucumber, green onion
  • Spider Roll: deep fried crab, spicy mayo, avocado, cucumber, green onion
  • Safe Roll: baked fish filet, spicy mayo, avocado, green onion
  • Veggie Roll: asparagus, cream cheese, avocado, cucumber
  • Unagi Roll: BBQ squid, avocado, cucumber
  • Pickled Roll: pickled ginger, pickled cucumber, green onion
  • Sunshine Roll: green mango, avocado, cream cheese
  • Calamari Roll: Squid, tempura flakes, spicy mayo, cucumber
  • Rainbow Roll: california roll with assorted sashimi: red snapper, white snapper, tuna, salmon
  • Green Dragon Roll: california roll with avocado on top
  • Red Dragon Roll: california roll with salmon sashimi on top
  • Shiitake Roll: shiitake mushroom, avocado, cucumber
  • Firecracker Roll: scallop, spicy mayo, avocado
  • Philadelphia Roll: cream cheese, smoked salmon, capers, green onions
  • Hamachi Roll: Yellow-tail, cucumber, avocado
  • Egg Salad Roll: egg, mayo, green onion
  • Tako Roll: no, not tacos. it's octopus.
NOTE: if you're not willing to spend a ton of money on sushi-grade fish, here are alternative:
-deep fried shrimp
-fried or baked fish, such as haddock, halibut, or cod
-imitation crab is cheap
-vegetarian rolls
-bastardisation rolls, using the least-japanese things ever. [example, the texas roll is beef, cucumber, and spinach, and the holiday roll includes turkey, cream cheese, and cranberry sauce.



you can always keep it simple and make Kappa Maki [cucumber, and only that]

WORTHY ADDITION: fish eggs. sesame seeds. of course, like i said, ginger and wasabi and soy sauce are a must. 
and for dessert..... candy sushi. because someone was fat enough to come up with this.
rice crispy squares, fruit roll-ups, and swedish fish.
