Buffalo Cauliflower

Ingredients

  • 1 medium sized head of cauliflower, chopped into florets
  • 1/2 cup egg or substitute
  • 1/2 cup all-purpose whole wheat flour
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2/3 cup hot sauce or buffalo sauce
  • 1 tbsp light butter or margarine

Instructions

  1. Preheat oven to 400 degrees. Spray a small baking dish with nonfat cooking spray.
  2. Place eggs/sub in one small bowl, and in a separate small bowl, combine flour, onion powder and garlic powder.
  3. Dip each piece of cauliflower into egg and then coat evenly with the flour mixture, and then place into the baking dish.
  4. Place into oven and bake until cauliflower becomes tender.
  5. In a small sauce pan, melt butter  or marg and then mix in hot sauce. Heat until combined and warm, just a minute or two.
  6. Remove cauliflower from oven and pour ½ of the hot sauce mixture over the cauliflower. Put back into the oven and bake for another 5-10 minutes.
  7. Serve immediately

NOT VEGAN? Blue cheese dip:
1/4 cup blue cheese
1/4 cup light mayo
pepper, green onion, chives
lime juice
