Meditteranean Feta & Chickpea Orzo


The very best pasta salad, in my opitnion.

1. boil orzo, drain.
2. toss together 1 can chickpeas with chopped fresh oregano or dry, [just a bit] feta cheese, celery, red onion,  tomato and cucumber optional. 
3. add orzo, toss with 2 tablespoons olive oil,. 3 tablespoons lemon juice, 3 cloves minced garlic, oregano and paprika.
