Shrimp, Tomato & Olive Salad


A very healthy and filling salad.

1. cook shrimp with olive oil and garlic, salt and pepper. Or use cooked shrimp.
2.  toss together tomatoes, olives, onions, cucumber, pepper with lemon juice, dill, garlic, salt and pepper. add a bit of low-fat mayo for creaminess if desired. 
3, serve on a bed of lettuce.

PAIR WITH: a sweet white wine.
