Apple Cheddar & Walnut Muffins


An easy and low-cal start or finish to your day. sweet and savoury!

1. Preheat oven to 350 F, and lay out a muffin pan with papers.
2. mix together 1 and 1/2 cup whole wheat or half and half all purpose flour, 1/3 cup sugar, 1 teaspoon baking powder, and 1/4 teaspoon baking soda, a pinch of salt, a pinch of nutmeg, a pinch of cinnamon.
3. blend 1 egg with 1/3 cup apple sauce,  1/2 teaspoon vanilla or almond extract, and add 1 chopped and peeled apple and some crumbled walnuts, and some cubed sharp cheddar cheese.
4. mix wet ingredients into dry ingredients to form batter.
5. put into baking tins, bake for 15 mins, test with toothpick.
