Roasted Tomato & Red Pepper Gratin


1. Slice up 2 tomatoes and 2 red peppers, toss with 1/4 cup olive oil. 3 or 4 cloves minced garlic, 1 tablespoon lemon juice. 1 tablespoon sour cream. salt, pepper, and seasoning [parsley, thyme, and basil] and optionally add onions or boiled pasta. 
2. preheat oven to 400 F. grease a baking dish.
3. place in tomato/pepper mix, top with 1/4 cup parmesan cheese and 1/4 cup mozzarella/cheddar/provolone or any mix. 
4. mix in a little, add about 10 crushed crackers for a crispy topping.
5. bake for 30-45 mins.
