Roasted Cauliflower Casserole with Garlic, Lemon & Parmesan


1. preheat oven to 400 F.
2. chop into florets, boil cauliflower for 5 minutes until tender.
3. drain, toss with 1/4 cup low fat sour cream and 2 tablespoons cream cheese. add 2 tablespoons lemon juice, 2 cloves minced garlic, salt, pepper, and 1/4 cup grated parmesan. toss until coated.
4. put in a greased or paper baking dish, top with fresh parsley, more cheese, crushed crackers or breadcrumbs. 
5. bake for 25-30 minutes until golden on top.
