Egg Salad


So simple. And contrary to what some people think, eggs are AMAZING for you unless you're middle-aged and overweight and inactive. 

NOTE: use old-ish eggs, a 3 days to a week old, because you'll have a hell of a time peeling them otherish. 
TO BOIL EGGS: bring a pot of water to a boil. add in eggs, let boil for 15 minutes, turn heat off, leave them in for another 20. After, drop them in cold water and cool them for about an hour. Peel. 

THE CLASSIC:
6 hard boiled eggs, mashed with 1/4 cup mayonnaise, 1 sprig chopped celery, 1 sprig chopped green onion, 1 tablespoon yellow mustard, salt, pepper, and chives. 

add the following to the classic to makes these: 

AVOCADO EGG SALAD: Skip the mayo, use an avocado instead. You can add some jalapenos for a bit of spice, cilantro and lime juice for a Guacamole-esque egg salad. 
CURRIED EGG SALAD: add 1 tablespoon curry powder! 
LEMON-DILL EGG SALAD: add a tablespoon of lemon juice and some fresh dill weed.
DEVILED EGG SALAD: 1/4 cup mayo, green onions, paprika, a squeeze of lemon, 1 clove minced garlic, 1 tablespoon dijon mustard

MORE? 

TOMATO EGG SALAD: add 1 tablespoon tomato pasta, and some fresh basil.
HERB EGG SALAD: 1 tablespoon pesto and some nuts.
WASABI EGG SALAD: add 1 teaspoon or more wasabi and a bit of soy sauce.
HUMMUS EGG SALAD: skip the mayo, use hummus.
SPICY EGG SALAD: add 1 tablespoon curry paste or sriracha
FRENCH EGG SALAD: dijon mustard, and tarragon
MIDDLE EASTERN EGG SALAD: cumin, sumac, and turmeric to taste with some garlic
BACON & EGG SALAD: chop up some bacon bits.
