Asparagus & Goat Cheese Alfredo

Cut down on the pasta and still enjoy your favourite pasta [come on, alfredo is everyone's favourite] with a whole, hearty serving of vegetables. mmm.

1. boil pasta, drain. linguine or fettuccine.
2. boil asparagus for 5 minutes, drain. chop up.
3. in a saucepan, melt 2 tablespoons of butter on medium heat. add 3 cloves minced garlic, 1/2 cup milk, and 1 tablespoon of corn starch to thicken [no cream!!] or, omit the corn starch and go for low-fat sour cream instead.
3. season with salt, pepper, and add in 2 tablespoons lemon juice. 
4. mix in pasta and asparagus. simmer, add a bit of white wine if you want and boil off.
5. season with salt, pepper, and fresh parsley. adjust anything if needed. 
6. lastly, turn heat to low and add 1/4 cup parmesan and 3 or 4 tablespoons goat cheese depending on how much you like it. half cup cheese in total. Stir and cook until melted. 
6. ready! ground pepper and a sprinkle of cheese, serve.
