Sweet Potato Parmesan Latkes

Healthier, sweeter, all around better!

you need:

2 sweet potatoes 
1/2 cup egg whites 
1 cup Parmesan cheese
 1/2 teaspoon chopped fresh or dry rosemary
 1/4 teaspoon pepper
a bit of salt

1. fry in olive, canola or vegetable oil, drain before serving, with a zesty aioli.
