Yes, you can make pesto out of broccoli! It's delicious and thick, too.
First, boil broccoli for 5 minutes until firm but still a little crisp.
Boil pasta. Drain. Toss with a few broccoli florets, reserving the rest, and cool.
Make pesto: in a food processor, blend 1 cup broccoli with 2 tablespoons crumbled feta, a handful of pine nuts or walnuts, 1 tablespoon or two olive oil, 2 or 3 cloves garlic, salt, pepper, lemon juice to taste.
Top salad with pesto, a bit of feta and olives, serve!
