Spinach Sesame Salad


YOU NEED: 

a bunch of spinach, boiled or steamed
1/4 cup sake or dry white wine 
2 tablespoons soy sauce
2 teaspoons brown sugar
2 teaspoons sesame oil
1 inch piece grated ginger
1 teaspoon wasabi or horseradish, grated
2 tablespoons toasted sesame seeds

TO MAKE: 
1. Boil and drain spinach. 
2. In a large bowl, mix sake or wine, soy sauce, sugar, and sesame oil. also, wasabi and ginger.
3. Squeeze or roll spinach tightly in a kitchen towel to remove as much water as possible. Place in bowl and mix with dressing to coat. 
4. top with sesame seeds and green onions.
