Cashew Chicken


1. heat saucepan with sesame or peanut oil.
2. add in chicken [breaded?] , garlic to taste, and spicy curry paste or sriracha [any asian curry sauce] and 1 tablespoon rice or white vinegar. add 1 tablespoon or less brown sugar. 
3. add vegetables such as peppers, onions, baby corn, bamboo shoots
4. add 1 tablespoon soy sauce, 1 tablespoon peanut butter, and a dash of lime juice.
5. simmer, season with salt and pepper. taste and adjust. finally add in cashews. 
6. boil rice, drain. or, rice noodles.
7. top with thai basil and green onion. 
8. serve on rice!
