Spinach Salad with Baked Goat Cheese & Honey-Dijon Vinaigrette


YOU NEED:
Baby Spinach.
Goat Cheese.
Breadcrumbs.
Pine nuts or walnuts are great too.
Honey-Dijon Vinaigrette [honey, dijon mustard, salt, pepper, a bit of lemon juice]

First thing's first: baking goat cheese.
1. coat firm goat cheese in flour, then egg, then breadcrumbs.
2. lay on a baking sheet and bake for 15-20 minutes at 400 F. keep an eye on it, we don't want a huge mess on our hands. You can also fry them in some olive oil.
Honey-Dijon Vinaigrette: 1 tablespoon french Dijon mustard, 1/2 tablespoon honey [or more, to taste, i just like a hint of sweetness] a squeeze of lemon juice, salt, and pepper to taste. 

Toss salad, add toasted nuts, top with goat cheese fritters.
