Peanut Red Curry Noodles

Pad-Thai or Curry? No need to choose with this delicious Thai blend.

1. in a saucepan, heat 1 tablespoon sesame oil. add 1 inch piece of grated fresh ginger root, and 2 cloves minced garlic.  add in vegetables of your choice, such as:
Bok Choy
Broccoli
Red or Green Peppers
Shiitake or normal mushrooms
Onions
Green beans or snow peas
Cauliflower
Bamboo Shoots
Baby corn
etc....
2. add in 2 tablespoons unsweetened peanut butter, and 2 tablespoons red curry paste. ALSO, add meat in if using:
chicken
shrimp
tofu
beef
or keep it all-vegetarian.
3. on the side, bring rice noodles to a boil and drain.
4. add seasoning to sauce: 1 tablespoon rice vinegar, 1 tablespoon soy sauce, 1 tablespoon fish sauce [optional] and even a dash of coconut milk. red pepper flakes, salt, pepper, as needed.
Green Beans!
5. turn heat to very low, add in noodles, top with cilantro, lemongrass, and/or basil.
6. serve!
