1. boil pasta, drain, set aside.
2. in a saucepan, melt 2 tablespoons of butter, add in half a chopped onion, 2 cloves minced garlic, and chopped bacon, cook until crisp.
3. add 1/4 cup Gorgonzola and 1/2 cup skim milk, with a bit of flour to thicken the sauce.
4. add a handful baby spinach, simmer until wilted.
5. add in pasta, salt and pepper to taste.
6. at this point, season with herbs [parsley or tarragon] and make sure the sauce is just right.
7. serve, topped with parmesan and ground pepper
NOTE: you can also bake this with a crushed cracker and parmesan topping, for crispiness.
