1. boil long-grain rice according to directions [or wild rice for extra healthy]
2. in a pan, heat 1 tablespoon olive oil.
3. add in 2 cloves minced garlic, 1 chopped onion, chopped bell pepper, a chopped jalapeno or habanero for spice, black or kidney beans, sweet corn, and a chopped tomato.
4. at this point, add in meat or shrimp or egg, if you want it. [optional]
5. add in rice and 1/3 cup chicken or vegetable broth. simmer. add salt, pepper, cumin, paprika, and chili powder to taste, or a bit of taco seasoning.
6. simmer until ready.
serve next to mexican foods, or as burrito filling.
