Easy Shrimp Ceviche


YOU NEED:
shrimp. boiled for 5 minutes to be safe, or not.
1/4 cup lime juice. add grapefruit or orange juice for extra bamf. 
1 jalapeno pepper, finely diced.
half a green or red bell pepper, finely diced.
2 cloves minced garlic.
1 tomato, diced.
1/4 cucumber, diced.
1 diced avocado.
salt and pepper, a pinch each.
a handful fresh cilantro.
half a red onion, diced. 
1 tablespoon tomato paste.
1. boil shrimp briefly, and cool.
2. combine everything and let sit in the fridge for an hour.
3. add in shrimp, let sit for another 30-60 mins.
4. serve with tortilla chips or a tortilla!
