Mango Guacamole: Mash together 2 ripe avocados, 1 chopped green mango, half a red onion, 1 red bell pepper, 1/4 cup lime juice, 2 cloves minced garlic, and a handful of cilantro. Add a jalapeno or habanero to offset the sweetness. salt to taste.
Grilled Corn Guacamole: cook or grill a corn cob, add the kernels with 2 avocados, 1 red onion, 1/4 cup lime juice, 2 cloves minced garlic, cilantro, and salt to taste. Mash.
Sour Cream & Onion Guacamole: 1 avocado mashed with 1/4 cup sour cream. a bunch of chopped green onions, cilantro, lime juice, salt to taste.
Goat Cheese & Chive Guacamole: add a couple tablespoons crumbled goat or feta cheese, chopped chives, lime juice, garlic, salt to taste.
Black Bean & Chickpea Avocado: mash 1 avocado with some black beans and chickpeas. 2 cloves garlic, salt, cilantro, lime juice to taste.
Chunky Chorizo Guacamole: Fry up chorizo sausage. chop up tomato, red onion, avocado, and cilantro. Lime juice, salt, garlic to taste.
All-Dressed Nacho Guacamole: Chunks of avocado, black beans, tomato, bell peppers, red onion, salt, garlic, lime juice to taste, cheddar or monterey jack cheese
