Basil Pesto

THE CLASSIC: Green Basil Pesto.

In a food processor or with a mortar & pessel, mix:
1 cup packed fresh basil leaves
4 tablespoons extra virgin olive oil
4 cloves garlic
4 tablespoons lemon juice
1/3 cup toasted pine nuts or walnuts
4 tablespoons parmesan cheese [optional]
salt, pepper to taste

WHAT TO MAKE WITH BASIL PESTO? loads. 
Green Pesto marinated chicken, shrimp, or pork chops.
Green Pesto as a salad dressing, great with tomatoes and mozzarella. 
Green Pesto & Pecorino Orrechiette
Caprese Bruschetta, with buffalo mozzarella and tomato on top.
Green Pesto pizza, with green pesto as the base instead of tomato sauce
Cheese Ravioli with Green Pesto
Italian Pasta Salad with Green Pesto, Tomatoes, Olives, and Arugula
Caprese Panini: with tomatoes, basil pesto, and mozzarella
