Meditteranean Quinoa & Shrimp Salad

YOU NEED:
1 cup prepared quinoa [soak]
a dozen or more cooked shrimp, cut into chunks
1 cucumber, cubed and semi peeled
halved cherry tomatoes
diced red onion
crumbled feta cheese
fresh parsley

vinaigrette:
3 tablespoons lemon juice
3 tablespoons olive oil
2 cloves minced garlic
salt, pepper, dry oregano
