Beer-battered Fish Tacos

Beer batter! what an essential skill! These can be pan-fried for a lighter version. 

FOR THE BATTER:
2 ounces canned chipotle peppers or just the seasoning
2 eggs
2 cups beer (corona, or other pale beer]
2 cups all-purpose flour
2 tablespoons cornstarch
2 teaspoons baking powder
2 teaspoons salt
Freshly ground black pepper
TO MAKE:
Puree the chipotles or seasoning and egg together in a blender. When well blended transfer to a bowl and whisk in the beer. In a separate mixing bowl combine the flour, cornstarch, baking powder, and salt. Add the egg mixture to the flour mixture, whisking well to prevent clumps. Add freshly ground pepper. 
 
 YOU NEED:
Catfish or other white, firm fish fillets
soft corn or flour tortillas, or hard...
 coleslaw
avocado
salsa 
cilantro
sour cream, etc, all optional. 

FRY FISH! in a deep skillet with some veg or canola oil.
