Squash Ravioli


If you've got a pumpkin or squash, [hey, it's the season!] you can make tasty ravioli filling, or sauce.

CREAMY SQUASH PASTA SAUCE: 
Puree half a butternut squash or some pumpkin until smooth.
2. in a saucepan, melt 1 tablespoon butter, add in squash puree [about 1 cup] and 1 cup milk or cream. Onions, Garlic, and Herbs are optional.
3. top ravioli, season with pepper and salt. 

SQUASH RAVIOLI FILLING:
Puree squash or pumpkin with any of the following:

Pumpkin, Walnut & Parmesan Ravioli
Onion, Bacon & Butternut Squash
Rosemary, Goat Cheese & Butternut Squash
Feta, Garlic & Butternut Squash
Pine Nut, Pesto & Goat Cheese Butternut Squash
