Pesto Calamari


A marinade for delicious squid. 

1. get squid, wash, and cut into rings.
2. marinate in 1/4 cup olive oil, 3 cloves minced garlic, 1 tablespoon lemon juice, a handful chopped fresh basil,  salt and pepper. 
3. grill, bake or fry, using leftover marinade and basting. don't overcook! squid doesn't take long. 
4. top with pine nuts and feta cheese if desired.
