Jumbo Shrimp & Tomato Scampi


Mmmm. Shrimp. Here's a trick:

Grill shrimp WITH SHELL ON. the inside will be more tender. remove the shrimp from shells right before eating.

1. simmer 1 can crushed tomatoes with 2 cloves minced garlic, some chopped fresh basil, 1 tablespoon red wine, salt and pepper. optionally add mushrooms, peppers, and onion.
2. grill shrimp with a bit of olive oil, shell on.
3. add shrimp to sauce, simmer for 5 minutes. 
4. serve hot.
