Chicken Piccata


Lemon sauce for breaded chicken, italian style!

1. bread chicken: flour, then egg, then breadcrumbs
2. make lemon glaze, reserve half: 1/4 cup lemon juice, 1 tablespoon brown sugar, 2 cloves minced garlic,  1 tablespoon corn starch, simmer to thicken. 
3.  bake breaded chicken for 10 mins, coat breaded chicken in half of the lemon glaze, bake for another 10 mins.
4. take out, coat with leftover glaze, bake for another 10.  [total is 30]
5. serve with lemon slices, green onion and fresh parsley.
