Bruschetta Crab Cakes


A great variation on crabcakes!

1. Mix together 1 cup shredded crab meat with 1 egg. 
2. add in 1 large finely chopped tomato, a handful of finely chopped basil, 2 cloves minced garlic, salt, pepper,and 1 teaspoon lemon zest. use a food processor if you have one.
3. form into patties.
4. coat in flour, then egg, then breadcrumbs.
5. bake for 10 mins on each side, or fry until browned on both sides.
