Pasta Salads

Great for any event, leftovers, full meals. Always lightened up, by yours truly.

GREEK PASTA SALAD: Boil noodles, drain and cool. Add chopped tomato, cucumber, red, green, and yellow peppers, red onion. Chicken is optional. Make vinaigrette out of 2 tablespoons lemon juice, 2 tablespoons olive oil 1 teaspoon oregano, and 2 cloves minced garlic. Toss and serve, with feta cheese.
BALSAMIC ROASTED VEGETABLE SALAD: slice and grill, fry, bake, or roast vegetables [tomato, zuchini, peppers, onions, mushrooms] , in garlic, lemon juice, and balsamic vinegar. boil pasta, toss with fresh parsley and olive oil. top with a bit of parmesan cheese.
CLASSIC AMERICAN MACARONI SALAD: Boil macaroni, toss with 1/4 cup low-fat or olive oil [healthy fat] mayonnaise, salt, pepper, a pinch of garlic powder and paprika, and a squeeze of lemon juice. 1 tablespoon or so american mustard,  chop up green onions, celery, bell peppers, red onion. cheese and meat are optional.
GERMAN PASTA SALAD: boil pasta, add boiled potato chunks, and eggs, if you want. add in chopped pickles,  chopped ham, peas, 1/4 cup white vinegar, 1/4 cup low-fat mayo, 1 tablespoon german mustard, and toss. 
BLT PASTA SALAD: lettuce, bacon, and tomato, tossed with boiled pasta. add aioli of your choice [for example, 1/4 cup mayo, 1 teaspoon chipotle seasoning, lemon juice, green onions, salt and pepper]
TACO PASTA SALAD: toss together boiled pasta with black beans, tomato, sweet corn, red onions, ground meat is optional. mix together 1/4 cup sour cream with 1 tablespoon taco seasoning., and lime juice to taste. Add jalapenos or habaneros for spice. top with cilantro.
ANTIPASTO PASTA SALAD: Toss together boiled pasta, salami, cubes of provolone, tomato, cucumber, roasted veggies, olives, and top with Italian dressing [make or buy.] optionally, top with grated parmesan and fresh parsley.
DEVILED EGG PASTA SALAD: toss boiled macaroni with 1/4 cup mayonnaise, 1 teaspoon paprika, chopped celery and green onion, 1 or 2 tablespoons Dijon, salt, pepper, and cucumber. top with boiled eggs and more paprika.

Goat Cheese & Broccoli: boiled broccoli with creamy goat cheese, cherry or raspberry vinaigrette

AND VICKY'S SIGNATURE PASTA SALAD? Chickpeas, Fried Chorizo sausage, parsley, tomato, cucumber, red onion, with feta cheese and some lemon juice and garlic, salt and pepper.
