Greek Spinach & Rice Salad with Shrimp & Feta


1. boil shrimp and cook rice [basmati or wild rice], or use leftovers.
2. toss some baby spinach with greek vinaigrette: 2 tablespoons lemon juice, 1 tablespoon olive oil, 2 cloves minced garlic, a pinch of oregano, salt, and pepper
3. toss with rice, tomatoes, and onion. 
4. top with shrimp and feta cheese.
