Cheesy Broccoli & Chicken Potatoes


1. slice or mash potatoes, lay in a greased or papered baking dish.
2. drizzle with olive oil, season with salt, pepper, green onions, and garlic. 
3. preheat oven to 400 F.
4. chop broccoli into florets, boil for 5 minutes.
5. top potatoes with broccoli, a mix of swiss/cheddar/mozzarella or parmesan. add leftover chicken breast in chunks or slices, or make beforehand. 
6. bake for 25-35 minutes until cheese has browned and bubbled.
