Cauliflower Mac n Cheese


Yeah, Mac n Cheese is sinful and full of empty calories. This recipe is one of my favourites: lightens it up, and a full serving of vegetables!

1. Preheat oven to 400 F.
2. Grease a baking dish. 
3. boil cauliflower and pasta, each until semi-done.
4. mix together 1/4 cup parmesan, 1/4 cup skim milk, 1 tablespoon low fat sour cream,  1/2 cup cheddar or mozzarella [i like sharp cheddar] salt and pepper.
OPTIONAL: garlic, different cheese such as: goat cheese, feta, asiago, pimento, a mix
also, if you have an aversion to cauliflower [god knows why] you can substitute broccoli, potatoes [which doesn't make it any healthier] spaghetto squash, zuchini/
You can also add chunks of bread, onions, and peppers for extra taste and texture.
5. lay it all in a baking dish, cover in cheese mixture.
6. top with breadcrumbs or crushed crackers, more cheese, and parsley/basil or both.
7. bake for 25-30 minutes until bubby.
8. serve, seasoning with ground pepper, salt, fresh herbs. 

* NOTE: add low-fat cream cheese for more cheesy creaminess, without the guilt!!! so many ways to get around fat.
