Bruschetta

This is essential.
VICKY'S BRUSCHETTA: 
1 finely chopped tomato
1 handful finely chopped basil
half a finely chopped red onion
2 tablespoons olive oil
2 tablespoons lemon juice
2 cloves minced garlic
a handful crushed, toasted pine or walnuts
on nice baguette
topped with parmesan, baked for 15-20 minutes.
Spinach, Artichoke and Asiago: like the dip, all-inclusive. cooked spinach, artichoke hearts, topped with asiago and crushed garlic.
BLUE CHEESE: with a dash of hot sauce.
OLIVES & AVOCADO: aka tapenade and guacamole. with some tomatoes.
MINT, BERRY & GOAT CHEESE: goat cheese, mint pesto, and strawberries or sour cherries.
BACON AND CHEDDAR: works well with tomatoes and green onions too.
CAPRESE: tomatoes, fresh basil, mozzarella, drizzled in balsamic.
