Red Pepper Pesto, Walnut & Goat Cheese Linguine


Mmm, a great sauce for pasta, but you can use the pesto sauce for other things like chicken or seafood or even sandwiches, too.

RED PEPPER PESTO:
Puree [in a blender or food processor] 1 red bell pepper, a handful fresh basil, 3 cloves minced garlic, 2 tablespoons olive oil, 1 tablespoons red wine or balsamic vinegar, salt and pepper to taste, and 2 tablespoons grated parmesan cheese. 

PASTA:
Boil and drain linguine until al dente, simmer in a saucepan with sauce until tender, top with goat cheese, walnuts, and fresh parsley.
