Greek Tomato & Feta Rice

A tasty side for gyros or souvlaki or any greek food. 

YOU NEED:
1 cup cooked basmati, long grain, or wild rice
some olive oil
1 can plain tomato sauce
2 cloves minced garlic
2 tablespoons lemon juice
1 teaspoon each dry oregano and thyme
a small amount of chopped green onions and parsley for seasoning
salt and pepper to taste
crumbled feta cheese

1. prepare rice. 
2. in a pan, heat 2 tablespoons olive oil, and add minced garlic. optionally add chopped onion, zucchini, or peppers as extra vegetables. 
3. add in rice and tomato sauce. simmer, add lemon juice and herbs/seasoning. 
4. once thick and done, add chopped green onions and parsley.
5. serve and top with crumbled feta cheese.
