A vegetarian version of canneloni,but still so satisfying!
1. heat 1 tablespoon butter or olive oil. toss in chopped mushrooms, onion, zucchini, peppers, and any other vegetable.
2. simmer until soft, add 2 cloves minced garlic, any herbs or seasoning such as oregano, basil, parsley, or thyme.
3. boil canneloni just for 5 mins until a little tender. drain and cool until you can handle.
4. preheat oven to 350 F. stuff pasta with veggies.
5. put pasta in a baking dish, cover in tomato sauce, grated mozzarella and parmesan, and some fresh parsley.
6. bake for 20-30 mins until cheese has browned and bubbled.
