Spicy Chorizo & Parsley Pasta Salad


Chorizo is sooooo good. This is sort of Tabouli-inspired, so like a blend of Mexican and Middle-Eastern, i dunno. 

1. slice chorizo, fry up with chopped onions and taco seasoning.
2. boil pasta, drain and cool.
3. finely chop a head of fresh parsley. chop up tomatoes too. 
4. stir together chorizo, pasta, tomatoes, and parsley.
5. drizzle with lemon juice, salt, pepper, garlic, and cumin. add some low-fat mayo for creaminess. 

PAIR WITH: anything but red wine. i love red, but it just doesn't go. i'd say a nice light, limey beer.
