Simple and delicious shrimp to serve on seafood, pasta, or on its own.
1. peel and prepare shrimp.
2. heat a pan with a bit of olive oil, add shrimp, 3 cloves minced garlic, a bit of lemon juice, red pepper pesto, salt and pepper if needed. fry until done.
3. meanwhile, mix together 1/4 cup low fat sour cream with a couple sprigs chopped chives, 1/2 tablespoon lemon juice, 1 clove garlic, and 1 tablespoon parmesan cheese.
4. serve shrimp with sauce as a topping or dip.
