1. shred leftover chicken breast, or cook and cool a chicken breast.
2. mix with 1/4 cup low fat mayo, 2 stalks chopped celery, half a small chopped onion, salt, pepper, 1 teaspoon dijon mustard, a pinch of garlic powder.
3. blend into chicken salad [pasty] and serve! with fresh parsley.
