Thai Melon Salad

1. chop up cantaloupe or honeydew melon or make melon balls.
2. toss with fresh mint, peaches, onion, and cilantro.
3. make vinagrette: 1 tablespoons unsweetened peanut butter, a pinch brown sugar, red chili flakes or chili-garlic sauce, 1 tablespoon lime juice, 1 tablespoon soy sauce, garlic salt and pepper to taste.
4. toss, top with chopped peanuts or almonds. 

WORTHY ADDITIONS:
shrimp, mango, fish, spicy beef, chicken,  cucumber, carrot, bell peppers, cheese, etc.
