Summer Salad with Crispy Goat Cheese


1. toss together mixed greens, avocado, strawberry, and toasted nuts.
2. vinaigrette of your choice: raspberry, balsamic, caesar, or greek work. anything light

BAKED GOAT CHEESE:
1. slice into chunks or slices, coat with flour, then egg, then breadcrumbs and bake for 5 minutes on each side until crisp but not completely melted and messy.

Toss salad, add goat cheese fritters!
