Ricotta-Stuffed Meatballs

Make your meatballs exciting!
1. mix together 500 grams ground beef, veal, chicken, lamb, turkey, or pork with 1/4 cup breadcrumbs and 1 egg.
2. season with salt, pepper, basil, parsley, garlic, whatever.
3. mix together ricotta cheese with some cooked spinach.
4. take a spoonful of the meat, flatten it in your hand, and place a bit of cheese mixture inside. Roll it up. Should make 20 or so meatballs.
5. Either bake for 40 minutes, or fry.
6. serve with tomato sauce, maybe some pasta, or as a fun appetizer with toothpicks.
