1. Place 1 cups basmati rice, 1 cup coconut milk, 3/4 cups water, in a pot. heat on medium high, covered, stirring occasionally. add 1 tablespoon oil.
2. Once it has begun to gently bubble, stop stirring and reduce heat to low heat.
3. Cover tightly with a lid and let simmer 15-20 minutes, or until most of the liquid has been absorbed by the rice.
4. optional: mix in green onion or vegetables.
Serve with toasted coconut, thai food, indian food, or anything!
