An easy and healthy bite, full serving of vegetables! You can bake or fry, with healthy olive oil.
1. boil 2 heads broccoli [cut into small florets] , just for 5 mins until slightly tender.
2. coarsely mix with 1/4 cup breadcrumbs, 1 egg, and 1/4 cup grated cheese. I'd recommend a mix of sharp cheddar and parmesan. season with minced garlic, salt, and pepper. Mash slightly together.
3. form into balls.
4. fry in olive oil, or bake, drizzled with a bit of oil, until browned.
5. serve warm!
