Classic Tabouli

Delicious and SUPER healthy salad. 

Use a food processor, or chop by hand [the first is easier, but where's the fun in that?]

Blend together:
2 chopped tomatoes
1 peeled and seeded cucumber
1 red onion
1 head fresh parsley
1/2 cup or more bulgur or cracked wheat [soaked in water and prepared according to package directions]
1/4 cup lemon juice
3 cloves minced garlic
1 and 1/2 tablespoons olive oil
a pinch of salt, pepper, and cumin

SERVE!

additional:

Vicky's Tabouli: use whole drained chickpeas instead of bulgur
Wild Rice Tabouli [instead of bulgur]
Couscous Tabouli [instead of bulgur]
Greek Tabouli: add Feta Cheese & Oregano
Mexican Tabouli: add Chorizo, Jalapeno peppers
Creamy Tabouli: add 1/4 cup greek yogurt
